I don't know what this week will hold as far as dinners are concerned. Since today marks the official beginning of the All You Grocery Challenge, we have to really watch what we eat! Hubby was a few minutes late getting off to work this morning because I had to stop him before he left without his lunch. Usually, when working early, he has graciously let me sleep in. Then at work, he fends for himself with some King's Hawaiian bread, Activa yogurt, and some other snacks. But we can't really do that this month! Well, we could if we stay within the $100/week budget (including eating out). I'll post some info over the following days on how we are doing with this Challenge.
The picture above shows 3 meals cooked from a 3.5 lb Boston butt pork roast from Publix. The pork "steaks" on the right were hubby's lunch yesterday and served with broccoli and brown rice. The meal on the bottom left was pork "strips" sauteed with potatoes, basil and mint (all from our container garden!) and onions. The top picture is 1.5 lbs or so of chopped pork braised with onions then simmered with tomatoes and green peppers from the freezer. We'll have this for dinner tomorrow night with some pasta and maybe black beans. Did I mention this pork was FREE with the $6 pork coupon? And except for the pork, all the other ingredients were from the freezer or garden!

My menu is very simple. As I have decided cooking simply, with lots of veggies and no real cut-and-dry recipe, is more my style. But check out all the other great menus this week at Organizing Junkie. Im sure you will find a few that suits your family!
