Menu Plan Monday 2.22.10

Foodwise, this was a great week. One morning we enjoyed breakfast burritos. Instead of flour tortillas, I used Toufayan Wraps. These went on BOGO sale at Publix for $2/2. I froze the whole package then thawed in the microwave for 30 secs.

French toast this morning was nice with yogurt. Instead of syrup, we had honey. It was yummy!

Toasted ham and swiss sandwiches were great too!

We also had black bean quesadilla inspired by Amy’s Finer Things. Instead of frying it in the skillet, I used the George Forman grill. It was still a bit messy but no flipping required. I also used up the leftover beef mix from the burritos instead of chicken. It was yummy.
As a Rasinets fan, I really enjoyed this cranberry version I read somewhere on the blogosphere. All you do is heat up semisweet chocolate chips in the microwave at 1 min then 30 sec intervals until it's all melted then dump the craisins. Once coated, drop in small batches on a cooking sheet and flash freeze.

  1. Nice links...the crockpot enchiladas look really good. May have to try those soon! I have issues with sticking to weekly meal plans...I like the way you do yours...looking forward to reading more of your frugal tips!
