I haven't posted menus for a couple of weeks because we were on... Vacation! First time in 6 years. More on that later. So I am still unpacking. Yesterday I finally finished washing our laundry. And today I am trying to avoid procrastinating on making a menu. It just seems so hard to commit to cooking for a week when I was just enjoying not cooking a few days ago.
Monday- Brown rice, lentils and breakfast sausage
Tuesday- Chicken and carrots
Wednesday- Coneccuh sausage sandwiches (Lucy Buffet inspired)
Thursday- Beef roast
Friday- Leftovers
Saturday- Chicken sandwiches
Sunday- Homemade Rice-A-Roni
As you can see, these are the easiest things I can think of making from the top of my head. I plan to just survive lunch and serve cereal and smoothies for breakfast. We are also easing into our homeschool schedule this week. So my goal is to make sure we get something in our tummies and that's about it!
I'll try to be more creative..mmm... in September.
